colour swatches needed in illustrator

We require an illustrator/Photoshop file that enables us to modify the colors of the swatches as we introduce new colors to the range. These will be utilized in print and online, so I think an illustrator file would be preferable so that we can enlarge it without sacrificing quality. I've included a few examples of what we require.
